Now that we’re 6 days in and our daily diets consist purely of Christmas cookies… oh, just me? Yeah, I was kidding too. *ahem* Anyhow! Our next recipe comes from sweet Kayla Dzambo (city exploring master/graphic designer level expert) and the recipe she gives us certainly fools me into thinking it’s ok to eat these for breakfast. It’s oatmeal, so its healthy, right? Here’s what she has to say…

This is the perfect holiday cookie. It’s got everything for everyone – white chocolate chips for the chocolate lover, dried cranberries for those more into fruity sweets, and oatmeal to make everyone feel less guilty for having 1 or 5 of these treats (oatmeal means it’s healthy, right?). The cinnamon in this recipe really brings all the ingredients together and gives it that wintery comfort flavor everyone craves when it’s cold outside. What also makes these cookies so great? They are so easy to make! #winning #winwinwin

I found this recipe a few years ago. I loved how unique it was compared to other oatmeal cookie recipes (especially since I’m not the biggest fan of raisins). After being tried and tested, this recipe was adopted into my baking repertoire and I bring it out during the holidays when I can.

PS. Cooking tip! “Old-fashioned rolled oats” are the same as Quick Oats by Quaker’s. It took some searching to figure this out (aka. standing in the aisle of the grocery store awkwardly for 15 minutes trying to google this solve on my phone with really slow reception).

Instructions
  1. Preheat oven to 350 degrees.
  2. Combine flour, baking soda, salt, and cinnamon in a small bowl.
  3. Beat butter, granulated sugar, brown sugar, eggs, and vanilla. Gradually beat in flour mixture.
  4. Stir in oats, cranberries, and white chocolate chips.
  5. Drop rounded balls (size of about 2 tsp) of dough onto ungreased cookie sheets.
  6. Bake for 10-12 minutes. Let cool for 1-2 minutes.
  7. Share and enjoy!
